Cabbage Soup

Cabbage Soup, paired with cornbread




Sorry!! I am slacking on the prep photos, but this is BEYOND super easy!!

INGREDIENTS:

  • 1 medium to large head of cabbage, thinly sliced
  • 1 11.5 ounce can V-8 tomato drink
  • 1/2 package Trader Joes Turkey bacon (or any turkey bacon), cut and diced
  • 1 1/2 cups shredded carrots
  • 2 cups broth, either chicken or beef
  • seasonings, as desired (I used a bit of salt, pepper, and garlic)...I add red pepper flake to my bowl later for a nice kick!
DIRECTIONS:

  1. Cook diced bacon in a soup pot with a bit of water (1/4 cup) for a few minutes to release flavor.
  2. Add in carrots and broth
  3. Simmer over medium low heat for about 5 mins
  4. Add cabbage and any seasonings you desire
  5. Simmer over low for 20 mins
  6. Add in V-8, stir
  7. Serve (you can garnish with a sprinkle of parmesan if you desire)
This is fabulous with cornbread!!

Hand Scrub

Easy peasy hand scrub & *brag* this rosemary is from my own herb bed 

Epsom Salt, light oil, peppermint extract, honey, rosemary (fresh)


Fill jars intended for scrub till there is 1/2 inch remaining, pour all salt into bowl for mixing. For recipe guidelines-(I used 4 small Ball jars)


Chop up rosemary-take in a deep breathe of that awesome aroma (approx. 1/4 cup)


Add 4 tbsp honey, 1/2 jar peppermint extract, rosemary and 1/4-1/2 cup oil to salt


Mix, you can always add more oil if needed.


Scoop mixture back into jars


Decorate

Soy Burgers?!?! Say What?

Yes. I must admit, I love Boca burgers, always have.  In general I try to avoid foods laden with soy, but this is one exception I make on occasion.

I love the taste, texture and the caloric value, pure win.  In Boca's defense, the soy is non-GMO, meaning not genetically modified in some lab, it is made from soy as God made it. Most of their burgers contain around 100 calories each so I generally have a double burger and I also am not ashamed of that HA HA.  If you haven't tried them out or you need to steer away from the 'steers' [aka-red meats] for cholesterol or other dietary restrictions, give this a go.  I cook mine in a skillet and sprinkle a bit of Worcestershire, pepper, and seasoning salt-LOVE IT.  Last night I made one with salsa and a bit of guacamole which ended up being fantastic.



I recently purchased some Boca crumbles and I am siked to work up some recipes with them.  Give them a go and let me know what you think.
