Cabbage Soup

Cabbage Soup, paired with cornbread




Sorry!! I am slacking on the prep photos, but this is BEYOND super easy!!

INGREDIENTS:

  • 1 medium to large head of cabbage, thinly sliced
  • 1 11.5 ounce can V-8 tomato drink
  • 1/2 package Trader Joes Turkey bacon (or any turkey bacon), cut and diced
  • 1 1/2 cups shredded carrots
  • 2 cups broth, either chicken or beef
  • seasonings, as desired (I used a bit of salt, pepper, and garlic)...I add red pepper flake to my bowl later for a nice kick!
DIRECTIONS:

  1. Cook diced bacon in a soup pot with a bit of water (1/4 cup) for a few minutes to release flavor.
  2. Add in carrots and broth
  3. Simmer over medium low heat for about 5 mins
  4. Add cabbage and any seasonings you desire
  5. Simmer over low for 20 mins
  6. Add in V-8, stir
  7. Serve (you can garnish with a sprinkle of parmesan if you desire)
This is fabulous with cornbread!!
